Tuna and Walnut Spread


This dish was created as a simple but delicious sandwich filling but with the addition of a bit more mayonnaise it became a family favourite dip. It only takes five minutes to whip up and all the ingredients are probably in your pantry or refrigerator.


Ingredients

1 95gm tin of tuna in oil lightly drained. We normally use the Sirena brand.

30gms walnuts. Lightly toast these (5 minutes at 170C), remove any loose skin and roughly chop.

1 spring onion finely chopped including some of the green section

1 tablespoon of good quality mayonnaise. Half to one tablespoon more to make it into a dip.

1/2 teaspoon fresh lemon juice

Salt and freshly ground black pepper to taste


Method

Mix all the ingredients except salt and pepper in a bowl then season to taste. If you are using this as a dip add extra mayonnaise to your preferred consistency and spoon into a serving bowl,

otherwise simply spread it onto your favourite bread for a sandwich. Weave also served it in baby cos lettuce leaves as a light canapés.
