The availability of seafood marinara mix at good fishmongers has made the making of a seafood pie very easy. However not all such mixes are created equal with some retailers using seafood extender. Yuk!!! If you can't buy quality marinara mix, go to the extra effort of buying seafood to make your own mix. We like the idea of three different fish and at least some prawns but we always make sure to include some scallops. In the dish photographed we added some roasted broccoli florets.
Ingredients
750gm seafood marinara mix or mixed seafood pieces
600ml bechamel sauce
2 tbsp fresh dill, finely chopped
50gm sourdough or panko breadcrumbs
20gm butter, grated
Extra butter for greasing the dish
Method
Make the bechamel sauce.
Set the oven to 180C.
Butter a 24cm pie dish.
Scatter the seafood evenly in the dish, sprinkle the dill over then pour the bechamel over and gently stir.
Scatter the breadcrumbs over then the butter over that.
Bake for 25 minutes until golden and bubbling.
