Red Salmon and Caviar Dip



Okay, it's not really caviar but much less expensive lumpfish roe, although it is still really tasty and so simple to make. Besides, if it was real caviar it would be too expensive to enjoy! I love it served on fresh sourdough or as a canapé on toasted sourdough croutons. You might enjoy it on a cracker biscuit; just don't tell me.


Ingredients

100gm tin of red salmon

200gm of cream cheese (light if you prefer) at room temperature

20gm red lumpfish roe caviar (About 1/2 a jar and available from the refrigerated section of good deli's) If you use just 20gm of the 50gm in a jar you can get two serves out of a jar plus some to garnish your canapés .

1/2 tablespoon of good quality mayonnaise (homemade is best if practical)

2 tablespoons of chopped chives

squeeze of fresh lemon juice (about 1/2 teaspoon or to taste)

pinch of salt !Be careful because the lumpfish roe is salty!)


Method

In a bowl mix the cream cheese with a fork until smooth.

Drain the salmon then clean by removing the bones and skin.

Place the salmon in the bowl with cream cheese and a pinch of salt then combine thoroughly.

Add mayonnaise, chopped chives and lemon juice and mix.

Fold in the red caviar.

Taste and add more lemon juice or salt until well balanced.

Spoon into a serving bowl or place on lightly toasted croutons and garnish with extra caviar.
