One Dish Warm Tapas


This is not a recipe but an idea we tried and were very happy with. The idea came from our daughter Caterina who was impressed with a one dish breakfast I cooked for her in Canberra. On that occasion I browned sausages in an oven proof pan then added bacon, mushrooms and spinach. I popped this in the oven for ten minutes then made indentations to break in four eggs then added torn pieces or sourdough that had been tossed in olive oil and scattered half a cup of shredded cheese over and baked this for 15 minutes or until the eggs had set.

After trying her own version of this dish, Caterina came up with the idea of using the same principle to make a one dish tapas to serve with drinks.

I couldn't resist the temptation to try my own version which is pictured above.

I had some roasted red and yellow peppers, some grilled zucchini, grilled button mushrooms, marinated olives and roasted baby Roma tomatoes. I tossed some torn sourdough in olive oil and grated Manchego cheese. Sliced chorizo was cooked in an ovenproof dish at 180C for ten minutes, turning the pieces halfway through. Excess fat was drained off and the remainder of the ingredients were added to the pan with the torn bread being added last. The pan was returned to the oven and baked for around 15 minutes until the bread was crisp and golden then served and washed down with a few glasses of wine.

There are no rules to this idea, just use what you have on hand or what takes your fancy.
