Just five ingredients are required to bake these tasty and simple to make biscuits with lots of fresh lemon flavour.
Ingredients
175gms softened unsalted butter
100gms castor sugar plus 2 extra tablespoons
2 teaspoons finely grated lemon rind. I used the peel from 2 medium lemons.
225gms plain flour
Pinch of salt
Method
Set your oven at 180C.
In a large bowl cream the butter and 100gms of sugar until it is light and fluffy. Naturally you can use a bench or hand-held mixer to do this. I need the exercise so I mix it by hand using a wooden spoon.
Add the lemon rind and beat until well combined. Mix the flour and the pinch of salt together then add it to the butter and sugar mix and mix until a smooth dough is formed. You may have to do this by hand as it is difficult to do with a spoon.
Divide the dough in two and form into a sausage shape 40mm to 50mm in diameter . They should be around 150mm long.
Sprinkle the remaining 2 tablespoons of sugar onto a chopping board and roll the two lengths of dough in the sugar.
Slice the dough into rounds 8mm to 10mm thick and place onto a greased or baking paper lined tray allowing space all around as they will spread slightly.
Bake for around 15 minutes until a light golden colour then cool on a wire rack.
When fully cooled store in an airtight container.
