This slice is just downright delicious as well as being easy and quick to make. Chrissie's late mother, the wonderful Phyllis Valvasori made a Date Slice that was enjoyed by many people over many years. Chrissie started making that slice in the early days of The Gourmet Grocer and over the years both there and at New Norcia Bakeries she developed a number of versions of that original Date Slice including this Fig and Walnut Slice. Chrissie still has her Mum's handwritten recipe along with many others.
Ingredients
120g butter
165gm self raising flour
pinch of salt
125gm castor sugar
220gm soft and juicy dried figs (we use Angus Park)
130gm chopped walnuts
1/2 teaspoon mixed spice
grated zest of one orange
2 tbsp orange juice
1 egg lightly beaten
Method
Set the oven at 170C (150C fan forced).
Line a slice tray with baking paper (approx 260mm x 180mm).
Zest the orange then juice it.
Cut each fig into six and marinate in the orange juice for at least 10 minutes.
Melt the butter and allow to cool slightly.
Sift flour, salt and spice into a mixing bowl.
Add sugar and mix until well combined.
Add butter and soaked figs. Stir briefly until combined.
Add the walnuts.
Lastly, add the lightly beaten egg and mix until incorporated.
Place into the prepared slice tray and smooth with a fork.
Bake for 25 to 30 minutes until a light golden colour.
Cool in tin then cut into 16 pieces using a sharp knife.
Store in an airtight container.
